SEBASTIAN'S STORY

The year was 1886.
Spanish explorer G.H. Sebastian set sail from the Gibraltar Harbour on a seven-year, seven-sea expedition in search of the “sips, savories, and secrets of the seven seas.” Rejecting his former life as a pirate after unsuccessfully attacking a group of Jesuit priests, Sebastian dedicated his life discovering and uncovering the “untold wonders of other cultures.”
In his now-legendary Captain’s Logs, he noted:“The sips, savories, and secrets of the Seven Seas reveal a glimpse of a paradise we’ve yet to see.” — G.H. Sebastian (circa 1888)
His ship, The S.S. Shangri-La, sadly returned with a lone survivor, who commandeered the ship to harbour with nothing more than a ragged sail and the Captain’s Logs serving as the only source of knowledge of what became of these adventurers. These notebooks detailed their travels, adventures, as well as specific instructions on the coffees and “savories” he discovered along the way. The notebooks were dispersed over the following century, surfacing all over the globe.
Affectionately dubbed “international coffee ambassador,” Sebastian’s name had a quiet rise to prominence in turn-of-the-century coffee circles, only to return to obscurity.In 2024, Joe Brewski, a small coffee roaster in Evansville, Indiana, while renovating the basement of their downtown building, discovered a leather satchel with multiple Captain’s Logs behind the brick walls.
Working with a historic society, they tracked the satchel’s journey to Sebastian’s travels through North America and through the Ohio River, where he and his crew were held at gunpoint by pirates at nearby Cave-in-Rock. Scholars believe this may be the last-known records of Sebastian.
On a whim, Joe Brewski followed the meticulous coffee instructions left by Sebastian, to discover “some of the most rich, dark, and flavorful coffees we’ve ever tasted.” With a dedication to honor the historic craft while making it accessible to their neighbors, Joe Brewski is working to bring these “adventurous” flavors to the world.
